Skip The Potatoes, Eat Cauliflower Instead

Okay, so lets start by saying that I am a carb addict! Not surprising, since a majority of us are. It’s hard not to be, they taste soooo good. But I’ve been trying to remind myself that just because it’s tastes good doesn’t mean it is good!

So in the search for some healthier alternatives that still taste just as good, I went to the one place many of us seem to go….Pinterest and started searching. Of course I pinned about a 100 things of which I will likely never make. But they look good on my recipe board, right? In my search however, I came across a recipe that peeked my interest enough to actually make it.

What was it you ask? Well let me tell you! It’s called the Loaded Keto Cauliflower Bowl. The exact recipe can be found over at Hey Keto Mama.

I don’t follow a Keto diet but wanted to try this out and I was not disappointed. I modified the recipe to suit my taste. It works well as a side dish or just on it’s own.

For my version I fully cooked a bunch of cauliflower. No exact amount. Just whatever seems enough for you.

While the cauliflower is cooking I chopped up the ingredients I wanted to added. I like to use bacon, pepper, green onions and cheese. As well as some seasoning salt and Tex Mex seasoning. Again it’s your preference.

Once the cauliflower is cooked and chopped up I mix everything together with about 1-2 tablespoons of mayonnaise and voilà you’re done. So easy and so delicious.

I do find letting it chill for about an hour gives it a more enhanced flavouring!
